James Moore boasts over twenty years of experience in prestigious kitchens worldwide. Hailing from a quaint town near Melbourne, Australia, James's culinary journey has taken him through renowned food hubs like London, Vancouver, and New York City. There, he honed his skills under the guidance of celebrated chefs such as Sean Hergatt of the two-Michelin-starred SHO and Ronny Emborg of the two-Michelin-starred Atera. In 2006, James crossed paths with co-owner Anthony Smith while they were both working at One Pico in Dublin.
