DIEGO GALICIA
Chef Diego, co-owner of Mixtli in San Antonio, Texas, brings a deeply personal touch to his culinary venture, drawing from his love for his native Mexico. Originally from Toluca, Mexico, Diego relocated to Texas in 2002, where he pursued psychology at The University of Texas at San Antonio before graduating from The Culinary Institute of America (CIA). During his time at the CIA, he gained valuable experience working at a brasserie and a local French bakery, leading Sunday brunches. Diego then returned to Mexico to work at Azul Condesa under the guidance of renowned chef Ricardo Munoz. His career continued with stints at Michelin-starred establishments like Atelier Crenn in San Francisco and Moto in Chicago. In 2013, he launched Mixtli with his partner, Rico Torres. By the spring of 2017, Diego and Torres were honored as Food & Wine magazine's Best New Chefs.
